Welcome to Finger Lakes Farmstead Cheese

At Finger Lakes Farmstead Cheese, we make European-style farmstead cheeses using fresh, raw milk from our family farm. Our cows graze from early spring to late fall: grazing keeps our herd happy and healthy, and is known for its positive effect on cheese flavor. We currently produce a traditional Dutch-type cheese named "Schuyler," and a Gruyère-style red-washed cheese called "Red Meck."

Spring is coming to the farm, and one of my favorite things is to visit our woods frequently to see the almost daily changes in the delicate woodland flowers, like those shown here.  We are looking forward to the cows going out to pasture in late spring, and the great cheese that we can make with that “spring flush” milk…
